Well, it sort of is an incomplete thought. The entire thought is focused on the "examination and the effects of pH on amylase." But what about them? You haven't stated what you're doing with the examination and the effects of pH on amylase. If it's the title of your lab report, then you can leave it how it is, but nobody can really rephrase it unless you have a clear subject and verb.
